When booking private chef service, you have two main options: choose a curated menu package or design a fully custom menu. Both deliver quality, but they serve different needs. Here's how to decide which option is right for your event — and what each one offers.

When to Book a Custom Menu vs. a Curated Package

Understanding the Options

Custom menus require consultation for pricing. You're booking on shorter notice: Curated menus are easier to execute quickly. Custom menus need more lead time for planning and prep. You like what you see: If a curated menu already matches your preferences, there's no need to customize. You're planning a wedding: Most weddings require custom menus. Couples want control over every detail, and guest counts often exceed what curated packages accommodate comfortably. You need complex dietary accommodations: If half your guests are vegetarian, or you need extensive gluten-free and dairy-free options, custom menus are built around those restrictions from the start. You want a specific service style: Stations, buffets, cocktail hour with passed apps, plated multi-course dinners — custom menus accommodate any format. You're celebrating a cultural or family tradition: If your event centers on Italian heritage, Southern family recipes, or any other cultural focus, custom menus honor those traditions. Examples of when custom menus work:

  • 80-guest wedding with Italian family recipes (custom plated service)
  • 50-guest corporate retreat with vegetarian focus (custom stations)

Can You Customize Curated Packages?

Yes, but within limits. What you CAN customize on curated packages: Dietary accommodations: We adapt dishes for allergies and dietary restrictions (gluten-free, dairy-free, vegetarian, etc.) Minor swaps: If you don't like Brussels sprouts, we can swap for a different vegetable. If you prefer chicken over beef, we can sometimes accommodate that. Add-ons: Want to add an extra appetizer or dessert course? We can usually add to curated menus. What you CANNOT customize on curated packages: Complete menu redesign: If you want to change half the dishes, you're designing a custom menu, not customizing a curated one. Service style changes: The Chophouse Dinner is family-style by design. If you want plated service, choose a different menu or go custom. Ingredient substitutions that change the dish fundamentally: Swapping Brussels sprouts for asparagus is fine. Replacing Gulf snapper with lamb chops is not — that's a custom menu. If your requested changes go beyond minor adjustments, we'll recommend booking a custom menu instead.

Pricing: What to Expect

Curated package pricing is displayed on our website and includes everything: ingredients, chef labor, service, setup, cleanup. The price you see is the price you pay (excluding optional gratuity). Custom menu pricing varies based on:

  • Complexity of dishes
  • Ingredient costs (filet mignon costs more than chicken)
  • Guest count
  • Service style (plated service requires more labor than family-style)
  • Event location (travel outside our primary service area incurs fees)

During consultation, we provide a detailed proposal with per-person pricing broken down by component. You'll know exactly what you're paying before you book.

How to Decide

Still unsure? Ask yourself these questions: Does a curated package already fit my needs? If yes, book it. Don't overcomplicate things by going custom just because you can. Do I want to see pricing before consultation? If yes, curated packages display per-person pricing on our website. Custom menus require consultation for pricing. Do I want full control over every detail? If yes, go custom. Curated packages are designed for ease, not total control. Is my event a wedding? Weddings almost always require custom menus due to guest counts, formality, and personal preferences. Am I booking on short notice? If yes, curated packages are easier to execute quickly. Do I have a clear vision that doesn't match existing menus? If yes, go custom. Don't try to force your vision into a pre-set package.

Combining Options: Multi-Day Events

If you're planning multiple meals over several days, you can mix curated and custom menus. Example:

  • Rehearsal dinner: Custom plated menu with family recipes

No problem. During consultation, if we realize your customization requests go beyond what a curated package can accommodate, we'll recommend transitioning to a custom menu. You're never locked in. The goal is to design the menu that best fits your event, whether that's curated, custom, or a combination.
